Fried Vermicelli

Ingredients (serves 4-5):

  1.  1 pack of rice vermicelli (mee hoon)

  2.  Garlic (chopped)

  3. 1 big onion (sliced)

  4. 4 eggs (grade A)

  5. 4 tbsp of tomyam paste

  6. 2 tbsp of sambal

  7. Soy sauce

  8. Salt and pepper

  9. Water

  10. Siew Pak Choy

  11. Tau Miu (pea sprouts)

Steps:

  1. Soak the vermicelli in water until it becomes soft.

  2. Fry the garlic in a wok until golden brown.

  3. Add the onion and fry for 1-2 minutes (until you can smell the aroma).

  4. Add the eggs and continue frying until they are cooked.

  5. Add the tomyam paste, sambal, soy sauce, salt and pepper to taste.

  6. Add half cup to 1 cup of water. Stir and bring to a boil.

  7. Add the vermicelli and stir with all the ingredients for a few minutes.

  8. Add the Siew Pak Choy and Tau Miu. Fry until cooked.

This Fried Vermicelli recipe is simple to cook and healthy to eat. The Siew Pak Choy and Tau Miu can be replaced with other types of vegetables such as cabbage, Choy Sum (sawi) or bean sprouts. You can also add more ingredients such as meat or seafood, but be wary of the cholesterol. ;)
